Remove the steak from the refrigerator 30 to 60 minutes before grilling
Pat the steak dry with paper towels
Season both sides generously with salt and black pepper
Preheat the grill to high heat
Clean and oil the grill grates
Place the steak on the hottest part of the grill
Grill for 3 to 5 minutes without moving it
Flip the steak and grill the other side for 3 to 5 minutes
Move the steak to a cooler part of the grill if needed to finish cooking
Check for desired doneness with a meat thermometer
Remove the steak from the grill when it reaches the target temperature
Let the steak rest for 5 to 10 minutes before slicing
Slice against the grain and serve
