Preheat the gas grill to high heat
Clean and oil the grates
Pat the steak dry with paper towels
Season the steak with salt and pepper
Let the steak sit at room temperature for 20 to 30 minutes
Place the steak on the hottest part of the grill
Grill with the lid closed for 2 to 5 minutes per side, depending on thickness and doneness
Rotate the steak once if you want grill marks
Use tongs to flip the steak
Check the internal temperature with a meat thermometer
Remove the steak when it is 5 degrees below your target temperature
Move the steak to a cooler part of the grill if flare-ups occur
Rest the steak on a plate or cutting board for 5 to 10 minutes
Slice against the grain and serve
