Pat the chicken wings dry
Trim any excess skin or loose tips if needed
Season the wings with salt, pepper, and desired spices or marinade
Preheat the grill to medium heat
Oil the grill grates lightly
Place the wings on the grill over indirect heat
Close the lid and cook for 20 to 25 minutes
Turn the wings every 5 to 7 minutes
Move wings over direct heat near the end to crisp the skin
Grill until the internal temperature reaches 165°F
Remove the wings from the grill
Let the wings rest for a few minutes
Toss with sauce if desired
Serve immediately
