Pat the NY strip steaks dry
Salt both sides generously
Let steaks sit at room temperature for 30 to 45 minutes
Preheat the grill to high heat
Clean and oil the grill grates
Brush the steaks lightly with oil
Season with black pepper and any desired dry spices
Place steaks on the hottest part of the grill
Grill for 3 to 5 minutes on the first side
Flip once and grill for 3 to 5 minutes on the second side
Move to indirect heat if the outside is browning too fast
Grill until the internal temperature reaches your desired doneness
Remove steaks from the grill
Rest the steaks for 5 to 10 minutes
Slice against the grain
Serve immediately
