Let the bacon grease cool slightly, but keep it liquid
Pour it through a fine mesh strainer or cheesecloth to remove bits
Transfer it into a clean, dry, heat-safe container
Use a glass jar, metal can, or ceramic container with a lid
Leave a little space at the top of the container
Seal the container tightly once the grease has cooled
Store it in the refrigerator for longer keeping
Store it in the freezer for even longer keeping
Keep it away from water, food scraps, and moisture
Use a clean spoon each time you scoop some out
Discard it if it smells sour, rancid, or looks moldy
