2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk or half-and-half
1 clove garlic, minced
1 small onion or shallot, finely chopped
10 to 12 ounces fresh spinach, washed and chopped, or 1 package frozen spinach, thawed and drained
Salt, to taste
Black pepper, to taste
Pinch of nutmeg, optional
2 tablespoons grated Parmesan cheese, optional
Melt butter in a skillet over medium heat
Add onion or shallot and cook until softened
Add garlic and cook briefly
Stir in flour and cook for 1 minute
Slowly whisk in milk or half-and-half until smooth
Cook until thickened
Add spinach and stir until wilted and heated through
Season with salt, black pepper, and nutmeg
Stir in Parmesan cheese if using
Serve warm
