Mix flour and salt in a bowl
Cut in cold butter until the mixture looks crumbly

Divide the dough into two portions
Shape each portion into a disk
Chill the dough in the refrigerator
Prepare the filling
Roll out one dough disk for the bottom crust
Place the bottom crust in a pie dish
Add the filling
Roll out the second dough disk for the top crust
Cover the pie with the top crust
Trim and seal the edges
Cut vents in the top crust
Brush with egg wash if desired
Bake until the crust is golden and the filling is set
Cool before slicing
