Soak 1 cup raw almonds in water overnight (or at least 8 hours)
Drain and rinse the almonds
Add almonds to a blender with 3 to 4 cups fresh water
Blend on high for 30 to 60 seconds until smooth
Strain through a nut milk bag or fine mesh sieve
Squeeze out as much liquid as possible
Optional: sweeten with 1 to 2 dates or 1 to 2 tbsp maple syrup or honey
Optional: add 1/4 tsp vanilla extract and a pinch of salt
Blend briefly again to mix any additions
Taste and adjust thickness by adding more water (thinner) or blending with less water (thicker)
Store in a sealed container in the refrigerator for up to 3 to 5 days
Shake well before each use
