Choose bone-in pork chops, about 1 to 1.5 inches thick

Pat the pork chops dry with paper towels

Season both sides with salt and black pepper

Add garlic powder, onion powder, paprika, or herbs if desired

Let the chops sit at room temperature for 15 to 20 minutes

Heat a skillet over medium-high heat

Add a small amount of oil to the skillet

Place the pork chops in the hot skillet

Sear for 2 to 4 minutes on the first side

Flip the pork chops and sear for 2 to 4 minutes on the second side

Reduce the heat to medium or medium-low

Add butter, garlic, and herbs if desired

Continue cooking until the internal temperature reaches 145°F

Spoon pan juices over the chops while cooking

Remove the chops from the skillet

Let the pork chops rest for 3 to 5 minutes

Serve immediately
