How to Make CAB Butter?

Chill heavy cream until very cold

Pour the cold cream into a stand mixer, food processor, or jar

Whip or shake the cream until it separates into butter and buttermilk

Drain off the buttermilk

Rinse the butter under cold water

Press and knead the butter to remove remaining liquid

Add salt if desired

Shape the butter into a block or store in a container

Refrigerate until firm
