Select fresh, mature sweet corn
Husk the corn and remove the silk
Wash the ears thoroughly
Cut the kernels from the cob
Sort and discard damaged kernels
Blanch the kernels in boiling water
Drain the kernels
Pack the kernels into sterilized canning jars or cans
Add hot water or brine as needed
Remove air bubbles
Seal the containers tightly
Process in a pressure canner at the proper time and pressure
Cool the containers completely
Check that the seals are secure
Store in a cool, dark place
