4 cups pitted cherries
3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/2 cup water
Combine cherries, sugar, cornstarch, and salt in a saucepan
Add water and lemon juice
Cook over medium heat, stirring constantly
Bring to a simmer
Cook until thickened, about 5 to 7 minutes
Remove from heat
Stir in vanilla extract
Cool before using in pie crust or storing in a container
