Let the dried chilies cool completely
Crush them by hand, with a mortar and pestle, or in a blender
Pulse lightly to keep a flaky texture
Sieve if you want to separate fine powder from flakes
Store the chili flakes in an airtight container
Keep the container in a cool, dry place
