Rinse 1 cup long-grain white rice until the water runs clear
Heat 1 tablespoon oil in a saucepan over medium heat
Add 1 cup rice and toast for 1 to 2 minutes
Add 2 cups water or chicken broth
Add 1 bay leaf
Bring to a boil
Reduce heat to low, cover, and simmer for 15 to 18 minutes
Remove from heat and let sit covered for 5 minutes
Fluff with a fork
Mix in 1 to 2 tablespoons lime juice
Mix in chopped cilantro
Add salt to taste
