Rinse 1 cup long-grain rice in cold water until the water runs mostly clear
In a saucepan, combine 1 cup coconut milk, 1 cup water (or substitute more water for a lighter flavor), 1/2 tsp salt, and 1–2 tbsp sugar (optional)
Bring the liquid to a boil over medium-high heat
Stir in the rinsed rice
Reduce heat to low, cover, and simmer 15–20 minutes until rice is tender and liquid is absorbed
Turn off heat and let sit, covered, 5–10 minutes
Fluff with a fork
Optional: stir in 1–2 tbsp lime juice and/or 1/4 cup toasted shredded coconut before serving
Optional: garnish with cilantro, scallions, or toasted coconut
