How To Make Crystal Candy (Kohakutou)?

1 cup water

2 cups granulated sugar

2 tablespoons agar-agar powder

Food coloring, optional

Flavoring extract, optional

Combine the water and agar-agar powder in a saucepan

Bring to a boil over medium heat, stirring until fully dissolved

Add the sugar and stir until dissolved

Boil gently for 2 to 3 minutes

Remove from heat

Add food coloring or flavoring, if using

Pour the mixture into a shallow lined dish or silicone mold

Let it cool at room temperature until firm

Unmold or cut into crystal shapes

Place the pieces on a tray

Let them dry at room temperature for 3 to 7 days

Turn the pieces occasionally for even drying

Store in an airtight container once the outside is firm and slightly crunchy
