Wash and peel the potatoes if desired
Cut each potato into even slices
Stack the slices and cut them into even strips
Turn the strips and cut across them into small cubes
Keep the dice as uniform as possible for even cooking
Rinse the diced potatoes if needed
Pat them dry before cooking
