Wash the pumpkin
Cut the pumpkin in half
Remove the seeds and stringy pulp
Place the pumpkin halves cut-side down on a baking sheet
Bake at 375°F to 400°F until tender
Let the pumpkin cool slightly
Scoop out the flesh
Blend or mash the flesh until smooth
Strain if a thinner puree is desired
Store in an airtight container in the refrigerator or freezer
