Pour regular milk into a heavy-bottomed saucepan
Use whole milk for the best result
Heat over medium-low until it begins to simmer
Reduce the heat to low
Stir occasionally to prevent scorching
Let the milk gently simmer until it reduces by about half
Remove from heat and let it cool
Strain if needed to remove any skin or solids
Transfer to a clean container
Refrigerate and use as evaporated milk substitute
