Pat filet mignon dry with paper towels
Season generously with salt and black pepper
Let steak sit at room temperature for 20 to 30 minutes
Preheat oven to 400°F
Heat a heavy skillet over high heat
Add a small amount of oil to the skillet
Sear filet mignon for 2 to 3 minutes per side
Sear the edges briefly if needed
Add butter, garlic, and herbs if desired
Transfer skillet to the oven
Roast until desired doneness is reached
Check internal temperature with a meat thermometer
Remove from oven and rest for 5 to 10 minutes
Slice and serve
