Crack eggs into a bowl
Add a splash of milk, cream, or water if desired
Whisk vigorously until fully blended and slightly foamy
Heat a nonstick pan over low to medium-low heat
Add butter or oil to the pan
Pour in the eggs
Let the eggs sit briefly until edges begin to set
Gently stir and fold the eggs with a spatula
Cook slowly, removing from heat while still slightly soft
Season with salt and pepper
Serve immediately
