How to Make Good Chili?

Brown ground beef, chuck, or turkey in a heavy pot

Season the meat with salt and pepper while cooking

Sauté diced onion, garlic, and bell pepper in the same pot

Add chili powder, cumin, smoked paprika, oregano, and cayenne

Stir in tomato paste and cook for 1 to 2 minutes

Add diced tomatoes, tomato sauce, and broth

Add beans if desired

Return the browned meat to the pot

Simmer on low heat for at least 30 to 60 minutes

Stir occasionally to prevent sticking

Adjust salt, heat, and spice to taste

Add a little sugar, cocoa, or coffee for depth if desired

Finish with lime juice or vinegar for brightness

Serve with shredded cheese, sour cream, onions, or cilantro
