Use eggs that are a few days old
Start with eggs in a single layer in a pot
Cover eggs with cold water by 1–2 inches
Bring to a boil over medium-high heat
Once boiling, turn off the heat and cover the pot
Let sit 10–12 minutes (smaller eggs 9–10, larger eggs 12–14)
Drain hot water immediately
Place eggs in an ice bath for 5–10 minutes
Peel under running cold water
Tap the egg all over to crack the shell
Start peeling from the wider end
Remove the shell in sections rather than pulling large pieces
If needed, return peeled eggs to cold water briefly to loosen bits
Use a spoon (or the back of a teaspoon) to slide under stubborn shell pieces
