Heat a pan over medium-high heat
Add a little oil
Sauté chopped onion and minced garlic until fragrant
Add chopped kimchi and cook for a few minutes
Stir in cooked rice and break up any clumps
Add kimchi juice, soy sauce, and a little sugar if desired
Mix everything well and cook until heated through
Add chopped scallions and sesame oil
Top with a fried egg if desired
Serve hot
