Preheat the oven to 220°C
Line a baking tray with baking paper
Peel the kumara
Cut the kumara into fry-shaped sticks
Place the kumara in a bowl
Add olive oil
Add salt
Add pepper
Add paprika or garlic powder if desired
Toss until evenly coated
Spread the kumara in a single layer on the tray
Bake for 20 to 30 minutes
Turn halfway through cooking
Bake until golden and crisp
Serve hot
