How to Make Licorice?

Soak 2 tablespoons dried licorice root in 2 cups water for 8 to 12 hours

Simmer the soaked root and liquid over low heat for 20 to 30 minutes

Strain out the root pieces

Return the liquid to the pot

Add 1 to 2 cups sugar or honey

Add 1/4 teaspoon salt

Add 1 to 2 teaspoons anise extract or fennel extract, if desired

Cook over low heat, stirring often, until thick and syrupy

Pour into a parchment-lined pan or silicone mold

Let cool until firm

Cut into strips or pieces

Dust lightly with cornstarch or powdered sugar, if desired
