2 large egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup light corn syrup
1/3 cup water
1 teaspoon vanilla extract
In a saucepan, combine sugar, corn syrup, and water
Heat over medium heat, stirring until the sugar dissolves
Stop stirring and cook until the mixture reaches 240°F
While the syrup cooks, beat the egg whites, cream of tartar, and salt until soft peaks form
Slowly pour the hot syrup into the egg whites while beating on high speed
Continue beating until the mixture is thick, glossy, and fluffy
Beat in the vanilla extract
Use immediately or store in an airtight container in the refrigerator
