How To Make Menudo?

Clean and rinse the tripe thoroughly

Boil the tripe in water with salt for 10 to 15 minutes

Drain and rinse the tripe again

Cut the tripe into bite-sized pieces

In a large pot, heat oil

Sauté garlic and onion until softened

Add chopped tomatoes and cook until tender

Add the tripe and stir well

Pour in water or broth

Add bay leaves, salt, and pepper

Simmer until the tripe is tender

Add diced potatoes and carrots

Add tomato sauce or tomato paste

Add red bell pepper if desired

Add chickpeas if desired

Cook until the vegetables are tender

Adjust seasoning with salt and pepper

Serve hot with rice
