Wash and finely chop fresh methi leaves
Mix wheat flour, chopped methi, salt, red chili powder, turmeric, ajwain, and a little oil
Add water gradually and knead into a soft dough
Cover the dough and rest it for 15 to 20 minutes
Divide the dough into equal portions
Roll each portion into a small ball
Dust with flour and roll into a flat paratha
Heat a tawa or pan
Place the rolled paratha on the hot tawa
Cook until small bubbles appear
Flip and apply ghee or oil
Cook the other side until golden brown
Flip again and apply ghee or oil if needed
Cook until both sides are evenly browned
Serve hot with curd, pickle, or butter
