Chill the milk thoroughly
Let it sit undisturbed so the cream rises to the top
Skim off the top layer with a spoon
Use whole milk for the best result
Add butter to milk and blend if you need a quick substitute for cream
Combine milk with melted butter in the ratio of about 3/4 cup milk to 1/4 cup butter
Whisk or blend until smooth
Use immediately for cooking or baking
