How to Make Pav Bhaji Masala?

2 tbsp coriander seeds

1 tbsp cumin seeds

1 tbsp fennel seeds

1 tsp black peppercorns

1 tsp cloves

2 green cardamoms

1 black cardamom

1-inch cinnamon stick

2 dried red chilies

1 tsp carom seeds

1 tsp turmeric powder

1 tbsp Kashmiri red chili powder

1 tsp dry mango powder

1 tsp amchur

1 tsp black salt

1 tsp regular salt

1 tsp ginger powder

1 tsp garlic powder

1 tsp nutmeg powder

1 tsp dried mint powder

Dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, cloves, green cardamoms, black cardamom, cinnamon stick, dried red chilies, and carom seeds

Cool completely

Grind to a fine powder

Mix in turmeric powder, Kashmiri red chili powder, dry mango powder, black salt, regular salt, ginger powder, garlic powder, nutmeg powder, and dried mint powder

Sieve the mixture

Store in an airtight container
