Boil 2 pounds of potatoes until tender
Drain and let the potatoes cool slightly
Peel the potatoes if desired
Cut the potatoes into bite-sized pieces
Hard-boil 3 to 4 eggs, then peel and chop them
Dice 1/2 cup celery
Dice 1/4 cup onion
In a large bowl, combine 1 cup mayonnaise, 1 tablespoon mustard, 1 tablespoon vinegar, salt, and pepper
Add the potatoes, eggs, celery, and onion to the bowl
Gently mix until everything is evenly coated
Taste and adjust seasoning with more salt and pepper if needed
Chill in the refrigerator for at least 1 hour before serving
Garnish with paprika or chopped parsley if desired
