1 1/2 cups warm water
1 packet active dry yeast
1 tablespoon sugar
4 1/2 cups all-purpose flour
1 teaspoon salt
2 tablespoons melted butter
10 cups water
2/3 cup baking soda
Coarse salt for topping
Combine warm water, yeast, and sugar in a bowl
Let sit until foamy
Add flour, salt, and melted butter
Mix until a dough forms
Knead until smooth
Cover and let rise until doubled
Preheat oven to 450°F
Line baking sheets with parchment paper
Bring 10 cups water and baking soda to a boil
Divide dough into small pieces
Roll each piece into ropes
Cut ropes into bite-size pieces
Boil dough pieces briefly in the baking soda water
Remove with a slotted spoon
Place on prepared baking sheets
Sprinkle with coarse salt
Bake until golden brown
Brush with melted butter if desired
