Chill all ingredients and equipment before starting

Fold the dough over the butter to enclose it
Roll the dough into a long rectangle
Fold the dough into thirds
Chill the dough
Repeat rolling and folding several times
Chill between each turn
Rest the dough before using
Roll the finished dough to the desired thickness
Cut and shape as needed
Bake in a hot oven until puffed and golden
