How to Make Salvadoran Pupusas?

2 cups masa harina

1 1/2 cups warm water

1/2 teaspoon salt

1 cup refried beans

1 cup shredded cheese

1 cup cooked and shredded pork or loroco, optional

Mix masa harina, water, and salt until smooth and pliable

Let dough rest for 10 minutes

Divide dough into equal balls

Flatten each ball into a thick disc

Place filling in the center

Fold dough around filling and seal

Gently flatten again into a thick patty

Heat a lightly oiled skillet or griddle over medium heat

Cook pupusas for 3 to 5 minutes per side until golden and cooked through

Serve with curtido and salsa roja
