Choose ripe, firm tomatoes
Wash and dry the tomatoes
Cut tomatoes in half or into thick slices
Remove cores and seeds if desired
Sprinkle lightly with salt
Place tomatoes cut side up on a drying rack or tray
Keep pieces spaced apart
Dry in direct sun with good airflow
Cover with cheesecloth or mesh to protect from insects
Bring indoors at night
Continue drying until leathery and no moisture remains
Store in an airtight container
Refrigerate or freeze for longer storage
