Peel and grate russet potatoes
Rinse the grated potatoes to remove excess starch
Drain well and squeeze out as much moisture as possible
Season with salt and any desired spices
Mix in a little flour or cornstarch to help bind
Shape the mixture into small tot-sized cylinders
Chill the shaped tots to firm them up
Heat oil in a deep fryer or heavy pot to 350°F
Fry the tots in batches until golden brown and crisp
Drain on paper towels
Serve hot
