Wash ripe tomatoes thoroughly
Remove stems and any damaged parts
Cut tomatoes into chunks
Place tomatoes in a pot over medium heat
Cook until softened and juicy
Mash the tomatoes to release more juice
Blend until smooth, if desired
Strain through a fine mesh sieve or cheesecloth
Add salt to taste
Add lemon juice if desired
Chill before serving
Store in a sealed container in the refrigerator
