Split 1 vanilla bean lengthwise
Scrape out the seeds
Mix the seeds with 1 cup granulated sugar
Add the empty vanilla bean pod to the sugar
Seal the sugar in an airtight jar
Shake the jar well
Let it sit for 1 to 2 weeks
Shake the jar occasionally
Remove the pod if desired, or keep it in for stronger flavor
Use the vanilla sugar in baking, coffee, or desserts
