Heat 1–2 tablespoons oil or butter in a pot
Add chopped onion and sauté until soft
Add chopped garlic and sauté briefly
Add chopped vegetables like carrot, beans, peas, corn, potato, and cabbage
Stir for 2–3 minutes
Add salt, black pepper, and any preferred herbs
Pour in water or vegetable stock
Bring to a boil
Reduce heat and simmer until vegetables are tender
Add chopped tomato or tomato puree if desired
Adjust seasoning
Serve hot
