Wash and peel potatoes if desired
Cut potatoes into even sticks
Use a waffle fry cutter or crinkle cutter
Slice the potatoes, then rotate 90 degrees between cuts to create the waffle pattern
Soak the cut potatoes in cold water for 20 to 30 minutes
Drain and dry the potatoes thoroughly
Heat oil in a deep fryer or heavy pot to 350°F to 375°F
Fry the potatoes in small batches until golden and crisp
Remove and drain on paper towels or a wire rack
Season immediately with salt or preferred seasoning
