Place chocolate chips in a dry, heatproof bowl
Fill a saucepan with 1 to 2 inches of water
Bring the water to a gentle simmer over low heat
Turn off the heat if using a double boiler setup, or keep it very low
Set the bowl over the saucepan without letting the bowl touch the water
Stir the chocolate chips frequently with a dry spoon or spatula
Remove the bowl from the heat when the chocolate is almost fully melted
Stir until the remaining chips melt completely
Use immediately before the chocolate thickens
