Cut off the crown
Score the skin from top to bottom along the natural ridges
Gently pull the fruit apart into sections
Submerge the sections in a bowl of water
Loosen the seeds from the white pith with your fingers
Let the seeds sink and the pith float
Skim off the floating pith
Drain the seeds
Pat the seeds dry if needed
