Wash the mango
Stand the mango upright on a cutting board
Identify the flat seed in the center
Slice down one side of the seed to remove a cheek
Slice down the other side to remove the second cheek
Score the flesh of each cheek in a grid pattern without cutting through the skin
Push the skin side up to pop the cubes outward
Cut the cubes off the skin with a knife or scoop them out with a spoon
Trim any remaining flesh from around the seed
Peel and slice the remaining pieces if desired
