Heat olive oil and butter in a large pan over medium heat
Add finely chopped onion, carrot, and celery
Cook until softened
Add minced garlic and cook briefly
Add ground beef or a mix of beef and pork
Cook until browned, breaking it up as it cooks
Stir in tomato paste and cook for a minute
Add red wine and let it reduce
Add crushed tomatoes or passata
Add milk or cream
Season with salt, black pepper, and a pinch of nutmeg
Simmer on low heat for at least 1 to 2 hours
Stir occasionally and add a little water if needed
Adjust seasoning before serving
Serve with pasta and grated Parmesan cheese
