How To Prepare Chicken Rice?

Rinse 2 cups of rice until the water runs clear

Drain the rice well

Heat 1 to 2 tablespoons of oil or butter in a pot

Add minced garlic and ginger if desired

Add the rice and stir for 1 to 2 minutes

Add 3 cups of chicken broth or water

Add salt to taste

Bring to a boil

Reduce heat to low and cover the pot

Simmer for 15 to 20 minutes until the liquid is absorbed

Turn off the heat and let it rest for 5 to 10 minutes

Fluff the rice with a fork

Serve with cooked chicken on top or mixed in

Garnish with chopped scallions or herbs if desired
