Cut boneless chicken into bite-sized pieces
Season the chicken with salt and pepper
Coat the chicken in cornstarch or a cornstarch-flour mixture
Dip the coated chicken in beaten egg if desired
Fry or pan-fry the chicken until golden and cooked through
Drain the chicken on paper towels
Mix soy sauce, honey or sugar, rice vinegar, sesame oil, garlic, and ginger to make the sauce
Heat the sauce in a pan until slightly thickened
Add the cooked chicken to the sauce and toss to coat
Sprinkle sesame seeds over the chicken
Serve with rice or vegetables
