Rinse the collard greens thoroughly under cold water
Remove the tough stems from the leaves
Stack the leaves, roll them up, and slice them into strips
Bring a pot of salted water or broth to a boil
Add the collard greens to the pot
Cook until tender, about 20 to 45 minutes depending on desired texture
Stir occasionally while cooking
Drain if needed
Season with salt, pepper, garlic, onion, vinegar, or smoked meat if desired
Serve hot
