Select the image
Open Window > Image Trace
Choose a preset like High Fidelity Photo or Black and White Logo
Adjust the Threshold or other settings if needed
Click Expand
Ungroup the traced artwork
Select the background shapes
Press Delete
Use the Direct Selection Tool to remove leftover pieces
Use the Pen Tool or Eraser Tool for manual cleanup
Save the file as needed
