Remove the starter from the refrigerator or storage
Discard all but a small amount of starter
Feed the starter with equal parts flour and water by weight
Mix until smooth and thick
Cover loosely
Keep at room temperature
Repeat feeding every 12 to 24 hours
Use warm water if the starter is very sluggish
Use whole wheat or rye flour for extra boost
Stir before each feeding
Watch for bubbles and rise
Continue feeding until it doubles reliably
Use it for baking once it is active and strong
